Fresh raspberries and real lemon juice come together in a drink that looks stunning and tastes even better — deep ruby red, lightly fizzy, and just the right balance of tart and sweet. The homemade raspberry syrup is the heart of it, simmered low and slow with maple syrup until the berries completely break down into a rich, jewel-toned liquid that you strain until silky smooth. Avoiding added citric acid can be genuinely tricky with store-bought mixers, sodas, and flavored syrups, since it hides in so many packaged drinks under both obvious and not-so-obvious names. Here, every drop of flavor comes from whole fruit and a handful of clean ingredients you can actually verify yourself. Squeezing your own lemons keeps the citrus component natural rather than processed, which is exactly the kind of workaround that makes this recipe so useful. Topped with chilled sparkling water and a sprig of fresh mint, it's the kind of drink you'd happily serve at a party without anyone suspecting it was built around a dietary need.

Combine the raspberries, water, and maple syrup in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan with a spoon, until the raspberries have completely broken down and the liquid is deep red and slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a heatproof bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much syrup as possible. Discard the solids. Let the syrup cool to room temperature, about 20 minutes, or speed it up by setting the bowl over an ice bath.
