This vibrant mocktail is built entirely from whole, recognizable ingredients — fresh raspberries, real lemon juice, maple syrup, and sparkling water — with absolutely nothing artificial sneaking in. So many store-bought mocktails and flavored sparkling drinks rely on synthetic flavor compounds to mimic fruit, which makes finding a genuinely clean option harder than it should be. Here, you make a quick homemade raspberry syrup on the stovetop, cooking fresh berries down with water and maple syrup until the liquid turns a gorgeous, jewel-toned red. Straining out the solids gives you a silky, naturally sweet base that tastes intensely of real fruit because it literally is real fruit. Paired with freshly squeezed lemon juice and chilled sparkling water, the result is bright, tart, and refreshing in a way no bottled version can match. A sprig of mint and a lemon slice on the rim make it feel genuinely festive — perfect for entertaining or just treating yourself to something that looks and tastes special without any compromise.

Combine the raspberries, water, and maple syrup in a small saucepan over medium heat. Cook, stirring occasionally and pressing the berries against the side of the pan with a spoon, until the raspberries have completely broken down and the liquid is deep red and slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a heatproof bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much syrup as possible. Discard the solids. Let the syrup cool to room temperature, about 20 minutes, or speed it up by setting the bowl over an ice bath.
