Bright, tangy, and flushed with the color of fresh summer berries, this drink is the kind of thing you want sweating in a pitcher on the counter all afternoon. The raspberry syrup is made from scratch by simmering real raspberries with maple syrup and water until they break down into a gorgeous deep pink-red — no artificial flavors, no mystery additives, just pure fruit. Straining the syrup gives you a silky, jewel-toned base that blends beautifully with freshly squeezed lemon juice and cold water. Soy can sneak into a surprising number of store-bought drinks and flavored syrups, so making this entirely from whole, simple ingredients means you know exactly what's in your glass. The balance of sweet and tart is easy to dial in at the end — a splash more water or an extra squeeze of lemon and it's exactly what you want. Served over ice with a few lemon slices and fresh mint, it looks like something from a café menu but comes together with almost no effort.

Combine the raspberries, maple syrup, and 1/2 cup water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a spoon, until the berries have completely broken down and the syrup is a deep pink-red, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids to extract as much syrup as possible. Discard the solids. Let the syrup cool to room temperature, about 15 minutes.
