Bright, tangy, and flushed with the color of fresh summer berries, this drink is the kind of thing you want sweating on a table in the backyard. The raspberry syrup is made from scratch by simmering real raspberries with maple syrup and water, then straining out the solids for a silky, jewel-toned base — no concentrates, no additives, just pure fruit flavor. That matters a lot when you're avoiding emulsifiers, because so many bottled lemonades and flavored syrups sneak in stabilizers and blending agents you'd never expect in a simple drink. Here, every ingredient is exactly what it sounds like: raspberries, maple syrup, lemon juice, and water. The tartness of freshly squeezed lemons cuts through the sweetness beautifully, and you can dial both up or down to suit your taste before serving. Poured over ice with a sprig of mint and a lemon slice, it looks like something from a fancy café — but it comes together in under 30 minutes with nothing more than a saucepan and a strainer.

Combine the raspberries, maple syrup, and 1/2 cup water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a spoon, until the berries have completely broken down and the syrup is a deep pink-red, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids to extract as much syrup as possible. Discard the solids. Let the syrup cool to room temperature, about 15 minutes.
