Bright, jewel-toned, and bursting with summer flavor, this sparkling drink is the kind of thing you'll want to keep on rotation all season long. A homemade raspberry syrup made with fresh berries and maple syrup forms the heart of the recipe — cooked down, strained smooth, and chilled before it meets a generous pour of fresh lemon juice and fizzy sparkling water. The result is tart, lightly sweet, and beautifully refreshing without any artificial flavors or mystery ingredients. Since everything here is built from scratch with whole, simple components, you know exactly what's going into your glass. It's naturally free of any animal-based ingredients, making it an easy, crowd-pleasing pour for just about any gathering. A few lemon slices and a sprig of fresh mint turn it into something that looks almost too pretty to drink — almost.

Combine the raspberries, maple syrup, and water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a spoon, until the berries have completely broken down and the syrup is slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, then refrigerate until cold, at least 30 minutes.
