Bright, fruity, and fizzing with fresh flavor, this raspberry lemon cooler is the kind of drink that makes any afternoon feel like a special occasion. The homemade raspberry syrup is the real star — simmered down from fresh berries and maple syrup until it's deeply colored and just thick enough to coat a spoon. Because everything here is made from scratch with whole, recognizable ingredients, you never have to second-guess what's actually in your glass. So many store-bought flavored drinks and syrups sneak in refined vegetable or seed oils through emulsifiers and additives, but this one sidesteps all of that entirely. Fresh lemon juice brings a bright tartness that balances the sweetness of the maple syrup beautifully, and the sparkling water keeps it light and refreshing. A few mint sprigs and lemon slices on top make it look like something you'd order at a nice café, but it comes together in your own kitchen with almost no effort. It's the perfect pitcher drink for warm days, dinner parties, or honestly just treating yourself on a Tuesday.

Combine the raspberries, maple syrup, and water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a spoon, until the berries have completely broken down and the syrup is slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, then refrigerate until cold, at least 30 minutes.
