Bright, fizzy, and bursting with real fruit flavor, this sparkling drink is the kind of thing you'll want to keep in the fridge all week. The homemade raspberry syrup is the star — fresh berries are simmered down with maple syrup and water until they collapse into a rich, jewel-toned liquid that tastes nothing like the artificially flavored stuff. Straining it through a fine-mesh sieve gives you a silky, smooth base that blends beautifully with tart fresh lemon juice. Once it hits the chilled sparkling water, you get this gorgeous blush-colored cooler that looks almost too pretty to drink. A handful of ice, a sprig of mint, and a lemon slice on the rim, and you've got something that feels genuinely special with almost zero effort. It's naturally sweetened, completely plant-based, and works just as well at a backyard gathering as it does on a quiet afternoon when you just want something refreshing and a little fancy.

Combine the raspberries, maple syrup, and water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a spoon, until the berries have completely broken down and the syrup is slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, then refrigerate until cold, at least 30 minutes.
