Bright, fizzy, and deeply refreshing, this raspberry lemon cooler is the kind of drink that makes any afternoon feel like a special occasion. The homemade raspberry syrup is the real star — simmered down from fresh berries and maple syrup until it's rich, jewel-toned, and packed with natural fruit flavor. Straining out the solids gives you a silky-smooth base that blends beautifully with fresh-squeezed lemon juice and chilled sparkling water. Many store-bought flavored drinks and syrups sneak in additives or thickeners that can be a concern for people avoiding certain legume-derived ingredients, so making your own from scratch puts you fully in control. Every single ingredient here is straightforward and clean — fruit, citrus, a natural sweetener, and bubbles. A handful of fresh mint and a few lemon slices on the rim take it from simple to stunning without any extra effort. It's the perfect pitcher drink for a warm day, and it comes together faster than you'd expect.

Combine the raspberries, maple syrup, and water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a spoon, until the berries have completely broken down and the syrup is slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, then refrigerate until cold, at least 30 minutes.
