Tart, fruity, and fizzing with fresh flavor, this sparkling drink is the kind of thing you want in your hand on a warm afternoon. The homemade raspberry syrup is the real star — simmered down from fresh berries and sweetened with maple syrup, then strained until it's silky smooth and deeply ruby-red. Squeezed lemon juice brings a bright, citrusy punch that balances the sweetness perfectly, and chilled sparkling water gives the whole thing a satisfying effervescence. Since every ingredient here is naturally free of dairy, there's nothing to swap or second-guess — just clean, vibrant flavors from start to finish. A handful of fresh mint and a few lemon slices on the rim make it look like something from a fancy café, even though it comes together with minimal effort. Make the syrup ahead of time and keep it in the fridge so you can pour a glass whenever the mood strikes.

Combine the raspberries, maple syrup, and water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a spoon, until the berries have completely broken down and the syrup is slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, then refrigerate until cold, at least 30 minutes.
