Bright, fruity, and completely refreshing, this sparkling drink is the kind of thing you want in your hand on a warm afternoon. The homemade raspberry syrup is the real star — simmered down with maple syrup and water until it's deeply flavored and beautifully ruby-colored, then strained smooth before it ever hits your glass. Fresh lemon juice brings a tart, citrusy lift that balances the sweetness perfectly, and the sparkling water keeps everything light and lively. For anyone avoiding black pepper, beverages can actually be a sneaky source of concern when pre-made mixes or flavored syrups are involved — here, every single ingredient is clean and straightforward with zero hidden spice. The gentle stir at the end preserves those bubbles, so each pour stays effervescent right down to the last sip. A few mint sprigs and lemon slices on top make it look like something from a fancy café, but the whole thing comes together with minimal effort and maximum payoff.

Combine the raspberries, maple syrup, and water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a spoon, until the berries have completely broken down and the syrup is slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, then refrigerate until cold, at least 30 minutes.
