Bright, fizzy, and deeply fruity, this sparkling drink is the kind of thing you want to sip on a warm afternoon when something refreshing feels absolutely necessary. The homemade raspberry syrup is the real star — fresh berries are simmered down with maple syrup and water until they collapse into a rich, jewel-toned liquid that tastes nothing like the artificially flavored stuff you'd find in a bottle. Squeezing your own lemons and straining the syrup by hand means every sip is clean and genuinely fruit-forward, with no mystery ingredients sneaking in. That matters more than it sounds, because so many store-bought mixers and flavored syrups rely on synthetic flavor compounds to mimic what real fruit actually tastes like. Here, the raspberries and lemons do all the work themselves. A gentle pour of chilled sparkling water at the end keeps the bubbles lively, and a sprig of fresh mint or a lemon slice on the rim makes it feel like something you'd order at a nice café. It's simple enough to throw together on a weekday but pretty enough to serve at a gathering.

Combine the raspberries, maple syrup, and water in a small saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a spoon, until the berries have completely broken down and the syrup is slightly thickened, about 6–8 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing firmly on the solids with the back of a spoon to extract as much liquid as possible. Discard the solids. Let the syrup cool to room temperature, then refrigerate until cold, at least 30 minutes.
