Tart, floral, and fizzing with fresh citrus, this agua fresca is the kind of drink that makes any afternoon feel like a celebration. Fresh raspberries are gently cooked down with maple syrup until they release every drop of their deep, jewel-toned juice, then strained smooth before lemon juice and zest bring a bright, zippy contrast. The whole thing gets topped off with cold sparkling water for a naturally effervescent finish that feels far more special than it is complicated. Every single ingredient here is naturally free of wheat and gluten, so there's no label-reading required — just pure, wholesome refreshment. Serve it over a tall glass of ice with a sprig of mint and a lemon slice, and it looks like something you'd pay way too much for at a trendy café. It's equally at home at a backyard cookout, a weekend brunch, or just a quiet Tuesday when you need something a little more exciting than plain water.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
