Tart raspberries, bright lemon, and a touch of maple syrup come together in a drink that feels like summer in a glass. The process starts by gently cooking the berries down into a rich, jewel-toned syrup, which gets strained smooth before the citrus is stirred in — the result is a clean, vibrant base with no seeds or pulp to get in the way. Once that syrup meets cold sparkling water, you've got something that looks stunning and tastes even better. It's naturally sweetened with maple syrup instead of refined sugar, which gives the whole thing a slightly deeper, more rounded sweetness that pairs beautifully with the lemon zest. Served over ice with a sprig of mint and a few lemon slices, it's the kind of drink you'd happily set out for a crowd or just make for yourself on a slow afternoon. Every single ingredient is plant-based and straightforward, so there's nothing to second-guess here — just a genuinely refreshing, made-from-scratch agua fresca that's as easy to love as it is to make.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
