Tart, floral, and fizzing with fresh flavor, this sparkling raspberry lemonade-style drink is the kind of thing you'll want to make on repeat all summer long. Fresh raspberries are gently cooked down with maple syrup until they release their deep, jewel-toned juice, which gets strained smooth before lemon juice and zest are stirred in for a bright citrus punch. The whole thing is finished with cold sparkling water for a refreshing lift that feels genuinely celebratory. Because every ingredient here is entirely plant-based — no honey, no refined sweeteners with questionable processing — you can serve it to anyone at the table without a second thought. It's also a great example of how a little stovetop effort upfront pays off in a drink that tastes far more sophisticated than anything from a powder or concentrate. Pile the glasses high with ice, tuck in a sprig of fresh mint, and let the color alone do the talking.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
