Bright, bubbly, and bursting with summer flavor, this sparkling raspberry lemonade-style drink is the kind of thing you'll want to make on repeat all season long. Fresh raspberries are gently cooked down with maple syrup until they release every drop of their deep, jewel-toned juice, which gets strained smooth before lemon juice and zest are stirred in for a citrusy punch. The whole thing is completely plant-based and naturally free from any meat or animal-derived ingredients beyond what you'd expect, making it a completely stress-free pour for anyone navigating a red meat allergy. Sparkling water is folded in at the end to keep things light and effervescent, so every glass feels a little celebratory. Served over ice with a sprig of fresh mint and a lemon slice, it looks as good as it tastes. It's the kind of drink that disappears fast at a gathering, so you might want to double the batch.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
