Bright, bubbly, and beautifully pink, this raspberry lemon agua fresca is the kind of drink that makes any occasion feel a little more special. Fresh raspberries are gently cooked down with maple syrup until they release a deep, jewel-toned syrup, which is then strained smooth and brightened with real lemon juice and zest. The result is a concentrate that's tart, floral, and just sweet enough — nothing artificial, nothing unnecessary. When you pour in the cold sparkling water, the whole thing comes alive with fizz and color. It's naturally free of any animal-derived or processed meat ingredients, so every sip is as clean and wholesome as it looks. Serve it over ice with a sprig of fresh mint and a lemon slice for a presentation that's effortlessly stunning. Whether you're hosting a backyard gathering or just treating yourself on a warm afternoon, this is the refresher you'll want to make on repeat.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
