Bright, bubbly, and deeply refreshing, this raspberry lemon agua fresca is the kind of drink that makes any afternoon feel like a celebration. Fresh raspberries are gently simmered with maple syrup until they break down into a gorgeous, jewel-toned syrup, which gets strained smooth before lemon juice and zest are stirred in for a citrusy punch. The whole thing is finished with cold sparkling water poured in slowly to keep every last bubble intact. Served over ice with optional mint and lemon slices, it looks stunning without requiring any special equipment or hard-to-find ingredients. Every component here is naturally free from tree nuts of any kind — no cross-contact concerns, no label-scanning required. It's the kind of recipe you'll want to batch up for backyard gatherings or lazy weekend brunches, and it comes together with nothing more than a saucepan, a strainer, and a pitcher.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
