Bright, bubbly, and bursting with summer flavor, this raspberry lemon agua fresca is the kind of drink that makes you want to sit on a porch and do absolutely nothing productive. Fresh raspberries are gently cooked down with maple syrup until they release every drop of their deep, jewel-toned juice, which then gets strained smooth and spiked with fresh lemon juice and zest for a citrusy punch. The whole thing gets topped off with cold sparkling water, so every sip is lightly fizzy and incredibly refreshing. Because it's built entirely from fruit, citrus, a natural sweetener, and sparkling water, there's nothing hidden to worry about — just clean, vibrant ingredients you can feel good about. Serving it over ice with a sprig of mint and a lemon slice turns a simple homemade syrup into something that looks genuinely impressive. It's a fantastic option for backyard gatherings, brunches, or any time you want a non-alcoholic drink that actually feels special.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
