Fresh raspberries and real lemon juice are the stars here, and together they create a drink that tastes like summer in a glass. The base starts on the stovetop, where the berries break down into a gorgeous deep-red syrup sweetened with maple syrup — no refined sugar, no artificial anything. Straining out the seeds gives you a silky, jewel-toned concentrate that pairs beautifully with the brightness of lemon zest and fresh-squeezed juice. Once that syrup cools, sparkling water gets folded in gently so every sip has a satisfying fizz. It's the kind of drink that looks impressive enough for a dinner party but comes together with minimal effort and a short list of whole ingredients. Served over ice with a sprig of mint and a lemon slice, it's genuinely hard to believe something this refreshing checks every box for grain-free, naturally sweetened eating.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
