Bright, bubbly, and deeply refreshing, this raspberry lemon agua fresca is the kind of drink that makes any afternoon feel like a celebration. Fresh raspberries are gently cooked down with maple syrup until they release every drop of their jewel-toned juice, then strained smooth and brightened with real lemon juice and zest. Sweetened entirely with maple syrup instead of processed additives, every ingredient here is clean and straightforward — no preservatives, no cured meats, no hidden chemical curing agents anywhere in sight. The sparkling water gets folded in at the end with a gentle stir so you keep all that fizz intact, and the result is a gorgeous crimson drink that looks far more impressive than the effort it takes. Poured over ice and finished with a sprig of fresh mint and a lemon slice, it's the kind of thing you'll want to make in a big pitcher and keep in the fridge all week. It's also naturally a crowd-pleaser for guests who are watching what goes into their glass, since the ingredient list is short, whole, and completely transparent.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
