Bright, fizzy, and bursting with summer flavor, this raspberry lemon agua fresca is the kind of drink that disappears fast at any gathering. Fresh raspberries are simmered down with maple syrup into a gorgeous deep-red syrup, then strained smooth and brightened with fresh lemon juice and zest before being topped off with cold sparkling water. The result is something that tastes far more special than the effort involved — tart, lightly sweet, and beautifully refreshing. Since the whole thing is built from fruit, citrus, maple syrup, and sparkling water, there's nothing to second-guess here — no hidden additives, no animal-derived ingredients, just clean and vibrant flavors. Pouring the sparkling water in slowly keeps those bubbles alive, so every glass stays lively right up until the last sip. Serve it over ice with a sprig of mint and a lemon slice for a presentation that looks like it came straight from a café menu.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
