Tart, bright, and absolutely gorgeous in the glass, this sparkling drink is the kind of thing that makes a regular afternoon feel like a special occasion. Fresh raspberries are simmered down with maple syrup until they collapse into a deep, jewel-toned syrup — no artificial dyes or refined sugars needed. A fine-mesh strainer does the heavy lifting to give you a silky, seed-free base that's smooth and clean on the palate. Fresh lemon juice and zest layer in that citrusy punch before cold sparkling water brings the whole thing to life with a gentle fizz. Every single ingredient here is naturally free of dairy, so there's nothing to swap or second-guess — just pour and enjoy. Served over ice with a sprig of mint and a lemon slice, it's as pretty as anything you'd order at a café, and honestly even more refreshing.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
