This vibrant, jewel-toned drink is everything you want on a warm day — tart, lightly sweet, and absolutely refreshing. Fresh raspberries are simmered down with maple syrup into a rich, deeply colored syrup that gets strained smooth before lemon juice and zest bring a bright citrusy punch. The whole thing is finished with cold sparkling water for a fizzy lift that makes it feel a little fancy without any real effort. Many store-bought flavored drinks and agua frescas sneak in coconut water or coconut-derived sweeteners, so making your own from scratch means you know exactly what's in the glass. Maple syrup does a beautiful job as the sweetener here — it blends seamlessly into the raspberry base without overpowering the fruit. Poured over ice with a sprig of fresh mint and a lemon slice, this is the kind of drink that disappears fast and gets requested again immediately.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
