Tart raspberries, bright lemon, and a touch of maple syrup come together in a sparkling drink that feels like summer in a glass. The process starts with gently simmering the berries down into a rich, jewel-toned syrup before straining out the seeds for a silky-smooth result. Lemon juice and zest get stirred right into that warm syrup, layering in citrusy depth before the whole thing is topped off with cold sparkling water. Pouring the sparkling water in slowly keeps those bubbles alive, so every sip has that satisfying fizz. Served over ice with a sprig of mint and a lemon slice, it looks as stunning as it tastes. This is the kind of drink that disappears fast at a backyard gathering, and the good news is it comes together with just a handful of real, wholesome ingredients — no mystery additives, no store-bought shortcuts needed.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
