Bright, bubbly, and deeply refreshing, this raspberry lemon agua fresca is the kind of drink that makes any afternoon feel like a celebration. Fresh raspberries are gently simmered with maple syrup until they break down into a gorgeous, jewel-toned syrup that gets strained smooth before anything else hits the pitcher. A generous pour of fresh lemon juice and a little zest sharpen the sweetness into something genuinely vibrant. Then comes the sparkling water — added slowly so every glass stays perfectly fizzy. The whole thing is naturally free from nuts and tree nuts of any kind, so there's zero need to scrutinize a label or worry about what's hiding in a store-bought mixer. Served over ice with a sprig of mint and a curl of lemon, it looks stunning without any extra effort. This is the kind of recipe you'll find yourself making on repeat all season long.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
