Tart raspberries, bright lemon, and a touch of maple syrup come together in a sparkling drink that tastes like summer in a glass. The process is simple — cook down fresh berries into a deep ruby syrup, strain it smooth, then lift it with lemon juice and zest before topping everything off with cold sparkling water. That slow pour of sparkling water at the end is a small but important step that keeps every sip lively and effervescent. Sweetened with maple syrup instead of refined sugar, this agua fresca has a subtly rich, natural sweetness that plays beautifully against the citrus. Every single ingredient here is naturally free of grain-based additives, so there's no label-scanning or substitution stress involved — just fresh, whole components doing all the work. Serve it over ice with a sprig of mint and a lemon slice for a presentation that looks far more impressive than the effort it takes.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
