Living with alpha-gal syndrome means scrutinizing labels on everything, but a drink this vibrant and fresh needs zero second-guessing. Fresh raspberries are simmered down with maple syrup into a jewel-toned syrup that's deeply fruity and naturally sweet — no mammal-derived ingredients anywhere in sight. A generous hit of lemon juice and zest keeps things bright and a little tart, balancing the berry richness in the best possible way. The whole thing gets topped off with cold sparkling water for a fizzy, refreshing finish that feels genuinely special. Straining out the seeds gives the final drink a smooth, elegant texture that's miles above anything you'd pour from a bottle. Serve it over ice with a sprig of mint and a lemon slice and it looks like something from a fancy brunch spread — with almost no effort at all. It's the kind of drink that makes a hot afternoon feel like a celebration.

Combine the raspberries, water, and maple syrup in a medium saucepan over medium heat. Cook, stirring occasionally and pressing the raspberries against the side of the pan with a wooden spoon, until the berries have completely broken down and the mixture is deep red and steaming, about 4–5 minutes.
Pour the raspberry mixture through a fine-mesh strainer set over a pitcher, pressing firmly on the solids with the back of a spoon to extract as much juice as possible. Discard the seeds and pulp left in the strainer.
