Crunchy, savory, and completely addictive, these roasted chickpeas deliver all the bold ranch flavor you crave without a drop of dairy or any of the thickeners and stabilizers that sneak into so many packaged snacks. Carrageenan — a common additive in processed foods and dairy-based dressings — has no place here, because every bit of that ranch-inspired flavor comes straight from your spice rack. Garlic powder, onion powder, dried dill, smoked paprika, and parsley do all the heavy lifting, coating each chickpea in a seasoning blend that tastes like your favorite dip in crispy, poppable form. The two-stage roasting method is the real secret: the first round dries the chickpeas out from the inside, and the second locks in that deep golden crunch that holds up even as they cool. Patting them completely dry before they ever hit the oven is a small step that makes a massive difference in the final texture. These are the kind of snack you make once and then find yourself making every single week — great straight off the pan, tossed over a salad, or packed into a lunchbox.

Preheat the oven to 400°F (205°C). Spread the drained chickpeas in a single layer on a rimmed baking sheet lined with paper towels. Pat them thoroughly dry with additional paper towels, then discard the paper towels and leave the chickpeas on the bare baking sheet.
Roast the chickpeas for 20 minutes, until the skins begin to split and the chickpeas feel firm when pressed. Remove from the oven and let cool for 2 minutes on the pan.
