This bowl is a genuinely satisfying meal that proves eating with histamine sensitivity doesn't mean settling for bland or boring. Caramelized carrots, sweet potato, beet, and parsnip come out of the oven tender and golden-edged, piled over fluffy quinoa and massaged kale that softens into something almost silky. The simple dressing — olive oil, apple cider vinegar, honey, and fresh parsley — ties everything together with a bright, herby lift. Blueberries add little bursts of sweetness that play beautifully against the earthy roasted roots, and torn fresh mint makes the whole bowl feel fresh and vibrant. One of the trickier parts of managing histamine is navigating fermented, aged, or processed ingredients that sneak into so many sauces and dressings, but every component here is straightforward and made from scratch. It comes together in about 35 minutes of mostly hands-off roasting time and makes four generous servings, so it works just as well for meal prep as it does for a weeknight dinner.

Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Combine the carrots, sweet potato, beet, and parsnip on the prepared baking sheet. Drizzle with 2 tbsp olive oil, sprinkle with 1/2 tsp salt, dried thyme, and dried oregano, then toss to coat evenly. Spread into a single layer, keeping the beet pieces on one side of the pan to prevent them from staining the other vegetables.
