Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
Combine the carrots, sweet potato, beet, and parsnip on the prepared baking sheet. Drizzle with 2 tbsp olive oil, sprinkle with 1/2 tsp salt, dried thyme, and dried oregano, then toss to coat evenly. Spread into a single layer, keeping the beet pieces on one side of the pan to prevent them from staining the other vegetables.
