A rich, golden chicken stock is one of those kitchen staples that quietly elevates everything it touches โ from soups and risottos to pan sauces and braised greens. The problem with store-bought versions is that many are loaded with additives, flavor enhancers, and dyes that have no business being in something as simple as simmered bones and vegetables. Making your own means you know exactly what's in it: chicken, aromatics, fresh herbs, and nothing else. The pressure cooker does the heavy lifting here, pulling deep, collagen-rich flavor out of the bones in a fraction of the time a stovetop simmer would take. A splash of apple cider vinegar helps draw out minerals and gelatin from the bones, giving the finished stock that satisfying, slightly silky body. Once chilled, you'll skim off the fat and be left with a clean, clear liquid that's ready to use or freeze in batches for months. It's the kind of foundational recipe that makes everything else you cook taste noticeably better.
