Rich, deeply savory, and built entirely from beef bones and vegetables, this pressure cooker broth is the kind of thing that makes everything else you cook taste better. Roasting the bones first at high heat draws out deep, caramelized flavor before a single drop of water is added — that step alone is what separates a truly great broth from a flat, pale one. Apple cider vinegar goes in early to help pull collagen and minerals from the bones during the long pressure cook, which is why the finished broth gels beautifully once it chills. Aromatics like garlic, onion, celery, carrot, and peppercorns round out the flavor without any dairy in sight, making this naturally compatible with a lactose-free lifestyle and free from any of the label-reading stress that comes with store-bought options. The pressure cooker cuts what would traditionally be an all-day simmer down to two hours, so you get that slow-cooked depth without hovering over the stove. Use it as a base for soups, braise your proteins in it, sip it straight from a mug — however you use it, a batch this good never lasts long.

Preheat the oven to 425°F (220°C). Arrange the bones in a single layer on a rimmed baking sheet and roast for 30–35 minutes, turning once halfway through, until deeply browned on all sides.
Transfer the roasted bones to the pressure cooker. Add the carrots, celery, onion, garlic, apple cider vinegar, bay leaves, peppercorns, salt, and parsley (if using). Pour in the cold water — the liquid should reach no higher than the pressure cooker's max-fill line; add or reduce water as needed.
