This salad is a serious showstopper — jewel-bright pomegranate arils, crispy golden tofu, and tender massaged kale all pulled together by a honey-turmeric dressing that's tangy, earthy, and just a little sweet. The technique of pressing and pan-searing the tofu until it releases naturally from the skillet is the secret to getting that satisfying golden crust without any fuss. Massaging the kale with the dressing softens the leaves just enough so every bite is silky rather than tough, and the fresh mint adds a cool, unexpected lift that makes the whole bowl feel alive. Pumpkin seeds bring a nutty crunch that rounds out the textures beautifully alongside the juicy burst of pomegranate. The dressing comes together in one small bowl with a quick whisk — pomegranate juice, lemon, olive oil, honey, and turmeric — and it does double duty, coating the greens first and then finishing the assembled salad. This is the kind of plant-forward meal that genuinely satisfies, whether you're feeding a crowd or just treating yourself to something a little extra on a weeknight.

Press the tofu dry: wrap the block in several layers of paper towels, set it on a plate, and press firmly for 5 minutes, replacing the towels once if they become saturated. Cut the tofu into 3/4-inch cubes.
Heat 2 tbsp olive oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the tofu cubes in a single layer, season with 1/4 tsp salt and 1/4 tsp black pepper, and cook undisturbed for 4–5 minutes until the undersides are deep golden and release easily from the pan. Flip and cook for another 3–4 minutes until golden on the second side. Transfer to a plate and let cool slightly.
