This vibrant salad is a full sensory experience — jewel-bright pomegranate arils, crispy golden tofu, and tender massaged kale all pulled together by a glossy, turmeric-kissed dressing. The combination of sweet pomegranate juice, fresh lemon, and honey creates a dressing that's tangy, floral, and just a little earthy, coating every leaf beautifully. Pressing and pan-searing the tofu until deeply golden gives it a satisfying crunch that holds up against the hearty kale, so you're never left with a soggy bite. Massaging the kale with the dressing is the kind of small step that makes a big difference — it softens the leaves just enough to make them silky without losing any of their structure. Torn fresh mint scattered throughout lifts the whole bowl with a cool, bright note that plays perfectly against the warmth of the turmeric. Pumpkin seeds add a final layer of nutty crunch, making this salad feel genuinely filling rather than just a side dish. Every ingredient here is naturally free of rye and grain-based fillers, so there's no label-scanning required — just clean, whole-food cooking from start to finish.

True Goodness by Meijer Organic Firm Tofu - 14 oz
Franklin Farms Organic Pressed Firm Tofu, 14 oz

Press the tofu dry: wrap the block in several layers of paper towels, set it on a plate, and press firmly for 5 minutes, replacing the towels once if they become saturated. Cut the tofu into 3/4-inch cubes.
Heat 2 tbsp olive oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the tofu cubes in a single layer, season with 1/4 tsp salt and 1/4 tsp black pepper, and cook undisturbed for 4–5 minutes until the undersides are deep golden and release easily from the pan. Flip and cook for another 3–4 minutes until golden on the second side. Transfer to a plate and let cool slightly.
