Eating well during pregnancy means loading up on nutrients without sacrificing flavor, and this vibrant salad delivers on both fronts in a big way. Massaged kale softens into something almost silky, soaking up a bright pomegranate and lemon dressing spiked with anti-inflammatory turmeric — a combination that tastes as good as it looks. Crispy pan-seared tofu adds satisfying protein and a golden crunch that makes this feel like a proper meal rather than a side dish. Pumpkin seeds bring a boost of plant-based iron and magnesium, two minerals that are especially valuable during pregnancy, while pomegranate arils scatter little jewel-like bursts of sweetness throughout every bite. Fresh mint lifts the whole bowl and keeps things feeling light even when you're already feeling anything but. Everything here is whole, recognizable, and straightforward to prepare, so you're never guessing about what went into your meal. It's the kind of salad you'll genuinely crave rather than just dutifully eat.

Press the tofu dry: wrap the block in several layers of paper towels, set it on a plate, and press firmly for 5 minutes, replacing the towels once if they become saturated. Cut the tofu into 3/4-inch cubes.
Heat 2 tbsp olive oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the tofu cubes in a single layer, season with 1/4 tsp salt and 1/4 tsp black pepper, and cook undisturbed for 4–5 minutes until the undersides are deep golden and release easily from the pan. Flip and cook for another 3–4 minutes until golden on the second side. Transfer to a plate and let cool slightly.
