Bright, jewel-toned, and packed with contrasting textures, this kale salad is the kind of dish that makes people ask for the recipe before they've even finished their plate. Crispy pan-seared tofu brings the satisfying chew and golden crunch that makes this feel like a real meal rather than a side dish. The dressing — built from pomegranate juice, fresh lemon, honey, and a touch of turmeric — is tangy, subtly sweet, and just rich enough to coat every massaged kale leaf beautifully. Massaging the dressing directly into the kale is the small step that transforms tough leaves into something tender and deeply flavored, so don't skip it. Pomegranate arils burst with sweetness against the earthy pumpkin seeds and cool torn mint, giving you something interesting in every single bite. Every ingredient here is naturally free from fungi and fungal derivatives, so there's no need to scrutinize labels or swap anything out — it works exactly as written. This one is equally at home as a weeknight dinner or something you'd proudly bring to a dinner party.

Press the tofu dry: wrap the block in several layers of paper towels, set it on a plate, and press firmly for 5 minutes, replacing the towels once if they become saturated. Cut the tofu into 3/4-inch cubes.
Heat 2 tbsp olive oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the tofu cubes in a single layer, season with 1/4 tsp salt and 1/4 tsp black pepper, and cook undisturbed for 4–5 minutes until the undersides are deep golden and release easily from the pan. Flip and cook for another 3–4 minutes until golden on the second side. Transfer to a plate and let cool slightly.
