Bright, jewel-toned, and packed with contrasting textures, this kale salad is the kind of dish that makes people stop scrolling and actually want to cook dinner. Crispy pan-seared tofu brings the satisfying chew and golden edges you'd expect from a much more complicated recipe, while a quick pomegranate-lemon dressing with a hint of turmeric ties everything together with a tangy, subtly earthy punch. Massaging the kale with half the dressing before assembling is the small step that makes a big difference — the leaves soften just enough to lose any bitterness without going limp. Pomegranate arils and fresh torn mint add bursts of sweetness and cool brightness throughout, and dry-roasted pumpkin seeds give every bite a satisfying crunch. Every single ingredient in this salad is naturally free from macadamia nuts, so there's no need to scrutinize labels or swap anything out — it works exactly as written. This is the kind of salad that holds its own as a full meal, not just a side, and it's impressive enough to bring to a dinner party without anyone feeling like they're missing out.

Press the tofu dry: wrap the block in several layers of paper towels, set it on a plate, and press firmly for 5 minutes, replacing the towels once if they become saturated. Cut the tofu into 3/4-inch cubes.
Heat 2 tbsp olive oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the tofu cubes in a single layer, season with 1/4 tsp salt and 1/4 tsp black pepper, and cook undisturbed for 4–5 minutes until the undersides are deep golden and release easily from the pan. Flip and cook for another 3–4 minutes until golden on the second side. Transfer to a plate and let cool slightly.
