Bright, jewel-toned, and packed with ingredients that genuinely love your digestive system, this salad is the kind of bowl that makes healthy eating feel like a treat rather than a chore. Massaging the kale with the pomegranate-turmeric dressing is the secret move here — it softens the leaves just enough to make them tender and deeply flavorful without wilting them into mush. Crispy pan-seared tofu adds satisfying protein and a golden crunch that holds up beautifully against the juicy pomegranate arils and cooling torn mint. Pumpkin seeds bring a toasty, nutty bite along with a solid dose of gut-supporting nutrients, while turmeric and lemon in the dressing keep things anti-inflammatory and zingy. Every component — the fermentable fiber in kale, the polyphenols in pomegranate, the plant-based protein in tofu — pulls its weight when it comes to keeping your gut happy. It comes together in one skillet and one bowl, which means less cleanup and more time actually enjoying what you made. This is the salad you'll want on repeat.

Press the tofu dry: wrap the block in several layers of paper towels, set it on a plate, and press firmly for 5 minutes, replacing the towels once if they become saturated. Cut the tofu into 3/4-inch cubes.
Heat 2 tbsp olive oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the tofu cubes in a single layer, season with 1/4 tsp salt and 1/4 tsp black pepper, and cook undisturbed for 4–5 minutes until the undersides are deep golden and release easily from the pan. Flip and cook for another 3–4 minutes until golden on the second side. Transfer to a plate and let cool slightly.
