Bright, jewel-toned, and packed with contrasting textures, this kale salad is the kind of dish that looks like it took serious effort but comes together in under half an hour. Crispy pan-seared tofu cubes bring satisfying golden crunch, while massaged kale softens just enough to soak up the vibrant pomegranate-lemon dressing without going limp. That dressing — built from olive oil, fresh pomegranate juice, lemon, honey, and a touch of turmeric — is tangy, subtly floral, and completely free of any coconut-derived ingredients, which can sneak into store-bought dressings more often than you'd expect. Pumpkin seeds add a nutty, toasty bite, and torn fresh mint lifts the whole bowl with an herby brightness that makes every forkful feel fresh. The massage step is the secret weapon here: working the dressing into the kale by hand breaks down the tough fibers and turns a potentially chewy green into something genuinely tender and delicious. This is a salad that works as a hearty lunch, a stunning dinner starter, or a meal-prep hero that holds up well once the components are stored separately. Serve it the moment the tofu hits the bowl so those crispy edges stay perfectly crunchy.

Press the tofu dry: wrap the block in several layers of paper towels, set it on a plate, and press firmly for 5 minutes, replacing the towels once if they become saturated. Cut the tofu into 3/4-inch cubes.
Heat 2 tbsp olive oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the tofu cubes in a single layer, season with 1/4 tsp salt and 1/4 tsp black pepper, and cook undisturbed for 4–5 minutes until the undersides are deep golden and release easily from the pan. Flip and cook for another 3–4 minutes until golden on the second side. Transfer to a plate and let cool slightly.
