This vibrant bowl is a study in contrasts — crispy golden tofu, tender massaged kale, jewel-like pomegranate arils, and a bright, tangy dressing that ties everything together beautifully. Every ingredient here is exactly what it says it is: whole, recognizable, and completely free from synthetic dyes or artificial colorings that sneak into so many packaged dressings and flavored proteins. The gorgeous ruby-red hue comes entirely from real pomegranate juice and fresh arils, while ground turmeric gives the dressing a warm golden tint that looks almost too pretty to eat. Massaging the kale with the dressing is a small step that makes a huge difference, softening the leaves just enough to balance the crunch of dry-roasted pumpkin seeds and the crispy tofu. Fresh mint adds an unexpected brightness that elevates the whole dish from simple salad to something genuinely special. It comes together in one skillet and one bowl, making cleanup as easy as the cooking itself.

Press the tofu dry: wrap the block in several layers of paper towels, set it on a plate, and press firmly for 5 minutes, replacing the towels once if they become saturated. Cut the tofu into 3/4-inch cubes.
Heat 2 tbsp olive oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the tofu cubes in a single layer, season with 1/4 tsp salt and 1/4 tsp black pepper, and cook undisturbed for 4–5 minutes until the undersides are deep golden and release easily from the pan. Flip and cook for another 3–4 minutes until golden on the second side. Transfer to a plate and let cool slightly.
