Bright, jewel-toned, and packed with texture, this salad is the kind of bowl that makes you feel genuinely good about what you're eating. Crispy pan-seared tofu brings satisfying protein and golden crunch without any mammalian meat or dairy, which is exactly what you need when navigating alpha-gal syndrome at the dinner table. The dressing — a quick whisk of pomegranate juice, lemon, honey, and turmeric — is tangy, lightly sweet, and completely free of the hidden animal-derived ingredients that can make store-bought dressings a gamble. Massaging the kale with half the dressing before tossing softens the leaves just enough to make them tender and deeply flavored rather than tough and bitter. Pomegranate arils burst with sweetness against the earthy pepitas and cool torn mint, giving every forkful a little something different. It's a genuinely stunning dish to bring to a dinner party, and nobody will guess it was built around a dietary restriction rather than pure culinary ambition.

Press the tofu dry: wrap the block in several layers of paper towels, set it on a plate, and press firmly for 5 minutes, replacing the towels once if they become saturated. Cut the tofu into 3/4-inch cubes.
Heat 2 tbsp olive oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the tofu cubes in a single layer, season with 1/4 tsp salt and 1/4 tsp black pepper, and cook undisturbed for 4–5 minutes until the undersides are deep golden and release easily from the pan. Flip and cook for another 3–4 minutes until golden on the second side. Transfer to a plate and let cool slightly.
