Roasting whole heads of garlic low and slow transforms sharp, pungent cloves into something almost buttery and deeply sweet — and that caramelized base is what makes this puree so irresistible. A quick reduction of pomegranate juice concentrates its tart, jewel-bright flavor into something almost syrupy, and when it meets the roasted garlic in the blender, the result is genuinely stunning. Fresh mint and a squeeze of lemon keep everything lively, while cumin and turmeric add just enough warmth to make the flavor feel layered and complex. The optional pomegranate molasses pushes the whole thing into rich, glossy territory if you want to go there. Every single ingredient here is naturally free of poultry in any form — no hidden broths, no meat-based fats, no cross-contamination concerns lurking in a store-bought spread. It comes together in one baking dish, one small saucepan, and a blender, which means cleanup is minimal and the payoff is enormous. Serve it as a dip, swipe it under roasted vegetables, or spread it thick on warm flatbread — it holds its own in any role you give it.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
