Roasting garlic low and slow transforms it into something almost unrecognizable — sweet, buttery, and deeply mellow — and this puree takes that magic even further with bold, unexpected flavors. Pomegranate juice gets simmered down into a lightly syrupy reduction before it meets the roasted cloves in the blender, adding a fruity tartness that balances the richness of the garlic beautifully. Fresh mint and a squeeze of lemon keep everything bright, while cumin and turmeric add just enough warmth to make the whole thing feel complex and crave-worthy. The optional pomegranate molasses deepens the flavor even more if you want to lean into that sweet-tart contrast. Every single ingredient here is naturally free of rye — no grains, no fillers, no ambiguous pantry shortcuts — so you can blend away without second-guessing the label on anything. The result is a silky, vibrant spread that works on everything from flatbreads and roasted vegetables to grain bowls or a simple crudité platter. It's the kind of recipe that looks and tastes far more impressive than the effort involved, and it stores beautifully in a jar in the fridge for easy snacking all week.

FIELD DAY OLIVE OIL EXTRA VIRGIN

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
