Roasted garlic transforms into something almost magical when you give it enough time in the oven — deeply golden, buttery-soft, and sweet in a way that raw garlic never hints at. This vibrant puree takes that caramelized base and layers in reduced pomegranate juice, fresh mint, lemon, cumin, and turmeric for a spread that feels both bold and surprisingly elegant. Every single ingredient here is naturally free of red meat, so there's no label-scanning or substitution anxiety — just straightforward, plant-based cooking that delivers serious flavor. The optional pomegranate molasses adds a sticky, tangy depth that makes the whole thing feel a little more special if you have it on hand. Spread it thick on warm flatbread, swipe it under roasted vegetables, or use it as a dip for crudités — it's versatile enough to anchor a whole spread. The jewel-toned color alone is enough to make people stop and ask what it is before they've even tasted it.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
