Roasting garlic low and slow transforms it into something almost unrecognizable — deeply golden, buttery soft, and completely mellow in flavor. Blended with reduced pomegranate juice, fresh mint, lemon, and warm spices like cumin and turmeric, this puree is vibrant, complex, and genuinely exciting to eat. Each of those ingredients brings something worthwhile to the table during pregnancy, and because everything here is whole, recognizable, and cooked from scratch, there's no guesswork about what's actually in it. The pomegranate juice gets simmered down until slightly syrupy before it hits the blender, which concentrates the flavor beautifully without adding anything processed. A squeeze of lemon keeps it bright, the mint keeps it fresh, and the optional pomegranate molasses adds a subtle depth if you want to lean into the richness. Spread it on warm flatbread, swipe it under roasted vegetables, or use it as a dip — it's the kind of recipe that makes healthy eating feel genuinely indulgent rather than obligatory.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
