Roasting whole heads of garlic low and slow transforms sharp, pungent cloves into something almost buttery and deeply sweet — and that caramelized base is what makes this puree so unexpectedly luxurious. A quick reduction of pomegranate juice concentrates its tart, jewel-bright flavor before it gets blended in, so every bite has this beautiful sweet-sour depth that feels anything but ordinary. Fresh mint and a squeeze of lemon keep things bright and lively, while cumin and turmeric add just enough warmth to make the whole thing feel complex without being fussy. The optional pomegranate molasses takes it even further if you want a richer, more intense finish. Every ingredient here is whole and straightforward — no flavor packets, no seasoning blends, no processed shortcuts that might sneak in unwanted additives. The result is a thick, glossy spread that works beautifully on flatbread, alongside roasted vegetables, or as a dip for a mezze-style spread. It's the kind of recipe that looks and tastes like you put in far more effort than you actually did.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
