Roasting garlic low and slow transforms it into something almost unrecognizable — deeply golden, buttery-soft, and sweet in a way that raw cloves never hint at. This puree takes that caramelized base and layers in reduced pomegranate juice, bright fresh mint, lemon, and warm spices like cumin and turmeric, landing somewhere between a dip, a spread, and a sauce you'll want to put on everything. The result is rich and complex without leaning on anything heavy — just good olive oil, whole ingredients, and a technique that does most of the work for you. It checks every box that makes this style of eating so satisfying: plant-forward, built on healthy fats, and genuinely full of flavor rather than relying on excess salt or processed shortcuts. The optional pomegranate molasses deepens the sweet-tart note even further if you want to push the intensity. Spread it on warm flatbread, swipe it under roasted vegetables, or serve it as a starter with whatever you have on hand — it's versatile enough to anchor a whole spread. This is the kind of recipe that looks impressive but asks very little of you beyond patience while the oven does its thing.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
