Roasting garlic low and slow transforms it into something almost unrecognizable — deeply golden, buttery soft, and sweet without a drop of added sugar or honey in sight. This puree layers that mellow roasted depth with reduced pomegranate juice, bright fresh mint, lemon, and warm spices like cumin and turmeric for a spread that tastes genuinely complex. Many store-bought dips and condiments sneak in honey as a sweetener or glaze, so making this from scratch puts you fully in control of every ingredient. The pomegranate juice gets simmered down until slightly syrupy, doing all the work of adding richness and a subtle fruity tang on its own. Everything goes into a blender and comes out thick, smooth, and vibrant — the kind of thing you'll want to put on flatbread, roasted vegetables, grain bowls, or honestly just eat straight off a spoon. The optional pomegranate molasses deepens the flavor even further if you have it on hand, but the base recipe stands beautifully on its own.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
