Roasting garlic low and slow transforms it into something almost unrecognizable — deeply golden, buttery-soft, and sweet without a trace of sharpness. This puree takes that caramelized base and layers in bright pomegranate juice, fresh mint, lemon, and warm spices like cumin and turmeric for a spread that feels genuinely special. The pomegranate juice gets simmered down into a syrupy reduction before blending, which concentrates its tartness and gives the finished puree a beautiful depth of flavor. Every single ingredient here is whole and real, which matters a lot when you're trying to avoid the sneaky sweeteners that show up in so many store-bought condiments and dips. No corn syrup, no mystery additives — just honest pantry staples doing exactly what they're supposed to do. The result is thick enough to mound on a spoon but still silky and spreadable, perfect on flatbread, alongside roasted vegetables, or as a bold alternative to hummus on a snack board. If you've been looking for a showstopper dip you can feel completely good about, this is it.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
