Roasting garlic low and slow transforms it into something almost unrecognizable — sweet, buttery, and deeply mellow — and this puree takes that magic even further with bold, unexpected flavors. Pomegranate juice gets simmered down into a glossy, tangy reduction before it meets the soft roasted cloves in the blender, and the result is a spread that tastes genuinely complex without requiring much effort at all. Fresh mint, a squeeze of lemon, and warm spices like cumin and turmeric round everything out into something vibrant and a little exotic. The optional pomegranate molasses adds an extra layer of richness if you want to lean into that sweet-tart depth. Every single ingredient here is naturally free from tree nuts, so there's no label-scanning or substitution stress — just straightforward, beautiful cooking. Serve it thick and mounded on a plate with warm flatbread, swipe it onto a grain bowl, or use it as a dip for roasted vegetables. It's the kind of recipe that looks and tastes like you worked much harder than you actually did.

Preheat the oven to 400°F (205°C). Place the trimmed garlic heads cut-side up in a small baking dish. Drizzle 1 tbsp of the olive oil over the exposed cloves, then cover the dish tightly with aluminum foil.
Roast the garlic for 40–45 minutes, until the cloves are deeply golden, completely soft, and a skewer slides through the center of the largest clove without resistance. Remove from the oven and let rest, still covered, for 10 minutes.
